Our story begins…

Chloé was in her early 20’s when she realized that making chocolate could be a job. An exceptional realization I imagine. She had always loved baking at home, and decided to educate her passion at the pastry school of Montreal. Chloé worked different jobs here and there, but knew she was looking for something more. It was in 2002 when Chloé was working at a bakery in Old Montreal that she had made the decision to start her own business. The support from her community uplifted her to do just that. The owners at the bakery helped her with the paperwork, and her friends at Réservoir Brewery helped her with the renovations. Her first store opened in 2003, and in 2008 she moved to the location she is now. This is the beginning of the delicious little chocolate shop…

What’s happening with all that chocolate?

Creamy peanut butter, dark chocolate and coffee, grilled almonds, white chocolate with zests of lemon and lime, crunchy nougats, salted caramel, *drool*… And this list goes on?
Who knew there were so many mouth-watering flavours!

Les Chocolats de Chloé aren’t just any old chocolate. The beans are brought from Valrhona in France. Not only has Valrhona been producing the worlds finest chocolate since 1922, they also have some pretty big goals for the future.

LIVE LONG ENVIRONMENT Strongly determined to cut its environmental impact in half by 2025, Valrhona has already considerably reduced its gas emissions, waste production, and energy and water consumption on industrial sites.

In addition, a new partnership has been developed between chocolatiers, research centers and universities to promote biodiversity. The project aims to reinvent the cocoa farming model to include the principles of agroforestry.

-All of our products will be eco-designed by 2020
-20% reduction in water use between 2013 and 2015
-7% reduction in our energy consumption since 2014
-We are working in partnership with the Foundation Terra Isara and scientists at CIRAD on “Cacao Forest”, an agroforestry project that is taking place over the next 5-6 years

For Chloé it is important that not only her chocolate beans are of the best quality, but also come from an ethical source that she believes to be positive.

Holidays are when Les Chocolats de Chloé is really booming. Christmas, Valentines and Easter are busy days in the little chocolate factory. You can find a modest variety of holiday-inspired chocolates that remain traditional and appealing.

And in the summertime?
How about a vanilla ice cream bar covered in a think layer of milk chocolate and caramelized hazelnuts?
Or maybe a mango sorbet popsicle?
OR maybe an ice cream sandwich made with chocolate and chocolate and more chocolate?
Whatever frozen treat you’re into, make sure to stop by and cool off in the summertime.

Why Supporting Local is important to her…

“Local business” tends to have an underlying meaning to it. Local businesses are people who generally support their communities, who give back to others and who take time to care about their clients. So even though Chloés chocolate beans come from a far away source, the source is still an extension of the values that come along with being “local”.

Les Chocolats de Chloé does it’s best to support its neighbours first. The tea used in some of their products is from a Montreal source, as well the printed wrapping paper comes from just down the road. Outside of the shop, Chloé and her partner practice supporting local by eating “with the seasons”.

Chloé loves the human relationship that comes with having a closer connections to her clients. She loves having her business work on a small-scale so that she can really get to know her customers. Additionally, she just loves to talk, so having her own small business makes that possible.

“If you could have a coffee chocolate bar with anyone (living or dead) who would it be and why?”

“A long time ago I was in the states, in Boston, and I saw an exhibit for Gee’s Bend. It’s a little place in Mississippi, where the old women were making quilts. They were making them from stuff; like old curtains or skirts or anything recycled. They were so poor, and so it’s crazy because they were doing this out of survival. But also, it was a way of getting together; it has a sense of community. So if I could speak with those women…

So I guess for my answer… it would be like…. some… old, crafty woman (or man)! I took a weaving class, and I loved it! And you know there are people who used to do that, just normally, on top of cooking for 13 people, breakfast lunch and dinner, and taking care of the house. That fascinates me, totally.”
